Halloween Family Home Evening

We had Adam and Emily and their girls over for Family Home Evening yesterday and had a blast. More so I think I did....

I found a bunch of fun recipes on the internet and this is what we came up with for dinner:

Pumpkin cake (a bundt cake with a frosted ice cream cone in the middle)
Scary ghosts (Nutter Butter cookies dipped in white chocolate and sprinkles for eyes)

And this was the winner!!!! Can you guess yet?
I cooked dinner in a pumpkin!!! And it was delicious. Now one of Preston's favorite meals!
Here it is. We had mummy dogs (like pigs in a blanket but with the face showing), deviled eggs, scones and yummy pumpkin casserole. Then the desserts of course.
Here's the recipe of the pumpkin dinner for all those interested. It turned out so great that I want this on my blog just so I can refer to it. Try it out for Halloween dinner!

Dinner in a Pumpkin
1 small or medium pumpkin
1 onion chopped
2 T oil
2 lbs ground beef
1 can water chestnuts
2 cups cooked rice
2 T brown sugar
1 4 oz can mushrooms
1 can cream of chicken
2 T soy sauce

Cut off top of pumpkin. Thoroughly clean inside and take out seeds. (Face can be painted on the outside with permanent marker or acrylic paint). Preheat oven to 350 degrees.

In large skillet, saute onions until tender. Add meat and brown. Drain fat from skillet. Add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes stirring occasionally. Add rice and water chestnuts.

Spoon mixture into cleaned pumpkin. Replace top, put pumpkin on a baking sheet, and put in oven. Bake at 350 degrees for 2 hours or until pumpkin is tender. Serve meal from pumpkin using the meat as your vegetable.

SOOOOOO GOOD! Try it out! It adds that extra little pumpkin flavor and has a fun Halloween feel!

I've made the mummy dogs a few times for my boys I take care of... they love them. The cake is a really cute idea. I may try and make one. I'm going to attempt to make my first pumpkin roll today... not so sure how it will turn out :)
